amazing lasagne with asparagus
this lasagne is an exact replica of the kind your mom used to make for you. or still makes for you, whatever. but seriously, we couldn’t believe how much this tasted like a real cheese lasagne.
what you’ll need:
about 10 strips of lasagne - it depends on how big they are, though, so just measure things out if you don’t want to make more than you need.
28 oz. crushed tomatoes, mixed with oregano, thyme, and parsley
2 cups black beans
1 recipe cashew cheese (about 2 or 3 cups, if you’re not making our recipe)
cook the noodles until they’re al dente. cook the black beans (if they’re dried).


start with a layer of tomato sauce, a layer of pasta, then some sauce, some cheese, then beans. then repeat the pasta-sauce-cheese-beans layers until the pan is filled.
on the top, we layered some asparagus, and brushed them with a mixture of olive oil, salt, and a little molasses.

cook in a 400F oven until the asparagus is cooked through, and enjoy!

Day #1.9: what were we thinking?!

After twenty-four hours, forty-three minutes, and over fourteen-hundred miles we arrive at our first stop, Hutchinson, Kansas.

Let me set the scene: It’s 5:15a.m. and we pull into a little gas station that is already bustling with farmer and truckers traffic. All the local citizens are wearing wooly coats, gloves, and heavy boots. It’s eighteen FREAKING DEGREES OUTSIDE!

As for my motley crew, we all bound inside fearing frost bite, leave the car running to stay warm, and make a last pit stop before the home stretch. With the exception of Ahmya, who has the only winter coat on, we rush in seeking heat. To accentuate matters, I’m wearing board shorts and t-shirt. Our dress and appearance causes everyone to cast a look on their face that says, “what the heck is wrong with these people?!” Then they all look outside and have all the answers they need:

California license plates.

Yeah, now we’re ‘those’ people. Awesome.

After trying go pack the car in this crazy SoCal rain storm, we called it a night. We were tired and thought it best to get some sleep.

After a few hours rest, we’re loaded and ready. Start time: 5:35am on 12/22.
